Sunakshi Gautam is an Assistant Professor at Shoolini University. She earned her MSc and PhD from Dr YS Parmar University of Horticulture and Forestry (UHF), Himachal Pradesh, specialising in the isolation of bioactive components from wild plants and post-harvest management of fresh commodities. She also holds a BSc (Hons) from the College of Horticulture and Biotechnology, Himachal Pradesh.
Her research focuses on the extraction, characterisation, and utilisation of bioactive phytonutrients in food products to enhance their functional properties. Additionally, her work explores the application of plant-based coatings on fresh commodities to improve shelf life and storage. Asst Prof Sunakshi has made significant contributions to the field, with numerous quality research articles and book chapters published in reputed SCI and Scopus-indexed journals and books.
She has delivered several scientific talks and presentations at various national and international conferences and has gained practical experience through hands-on training in milk product processing and participation in HACCP and food safety workshops.
Asst Prof Sunakshi teaches Meat and Meat Product Technology, Advances in Dairy Technology, Fruit and Vegetable Technology, Novel Food Packaging, and Food and Industrial Microbiology.
