Rajni Saini is an Assistant Professor at the School of Bioengineering and Food Technology. She holds a PhD in Food Technology from Punjab Agricultural University, Ludhiana.

Her academic journey includes an M Tech in Food Technology from Lovely Professional University, Phagwara, and a B Tech in Food Technology from CSK Himachal Pradesh Agricultural University, Palampur. She has also demonstrated her academic prowess by qualifying for the UGC-NET in 2023.

During her Master’s and doctoral studies, Asst Prof Saini delved into various aspects of food technology, focusing on bioactive extraction, process optimisation, and the development and characterisation of phytochemical-rich products. Her research has resulted in publications in high-impact factor journals and contributions to book chapters.

Asst Prof Saini’s research interests span a wide range of topics, including various extraction methodologies, exploration of novel green and safe solvents, novel processing technologies, product characterisation, and the complete value chain of processed products. With a passion for continuous learning and staying abreast of the latest advancements in food technology, she is poised to make significant contributions to both teaching and research in her field at Shoolini University.
